Cookies with a Surprise.
These cookies are truly delightful, an original and different idea. They are little stars that hug an almond or a chocolate… treats that, besides being good, inspire a lot of tenderness.
They are perfect if you plan to gift them to your loved ones. The dough I chose is very soft and the preparation is really quick.

Ingredients for Cookies with a Surprise

With these ingredients you can make: 17 medium star cookies and 30 small star cookies

➡️I used whole cane sugar but if you prefer, you can use granulated sugar

  • 2 cups spelled flour (Or all-purpose flour)
  • 1 packet vanillin
  • 1 egg
  • 1/4 cup extra virgin olive oil (Or vegetable oil)
  • 1/4 cup milk
  • 2 tsp baking powder
  • 1/4 cup whole cane sugar (Or granulated sugar)
  • chocolate (For melting)
  • almonds
  • peanuts
  • sugary stars

Steps for Cookies with a Surprise

  • In a bowl, pour the flour, sugar, and yeast, then mix carefully. Using a fork, start incorporating the oil, milk, and egg.
    Continue kneading with the fork until the dough allows, then begin working with your hands. When the dough is smooth, wrap it in plastic wrap and let it rest in the fridge for at least 30 minutes.

  • After resting, roll out the dough on a slightly floured parchment paper and cut out many stars.
    Place the shapes on a baking sheet lined with parchment paper. Position the almond on one side of the star, near one of the points; gently lift the point and fold it towards the center to hug the content.

  • With the same dough, create smaller stars and place star-shaped sugars to recreate the eyes. If you don’t have the sugars, you can make this detail after baking using melted chocolate.

  • Bake the cookies in a preheated static oven at 350°F for about 10 minutes. Once ready, remove them and let them cool completely.
    In the meantime, melt some chocolate in the microwave and place it in a piping bag, cutting the tip as small as possible. Then start decorating your cookies by carefully drawing the eyes and mouth.
