Cookies with Raisins and Pine Nuts

The cookies with raisins and pine nuts are delightful treats to enjoy at any time of the day.
They are very simple to make: the dough is prepared in a minute and then you just need to create simple balls, place them on a baking sheet, and gently press them with a stencil or your hands.
These cookies win over with their simplicity and deliciousness, thanks to the sweetness of the raisins and the crunchiness of the pine nuts. They are a small masterpiece of flavors and textures.

Ingredients for Cookies with Raisins and Pine Nuts.

Raisins should be soaked for 20 minutes. Then, drain and thoroughly squeeze them before adding to the dough.

  • 2 cups all-purpose flour (I used spelt)
  • 1/3 cup granulated sugar (Plus more for topping (optional))
  • 1 egg
  • 1/3 cup vegetable oil
  • 1 1/2 tsp baking powder
  • 1/2 cup raisins
  • 1/3 cup pine nuts

Steps for Cookies with Raisins and Pine Nuts

As always, I recommend sifting the flour and baking powder.

  • Mix the sugar and egg with a fork, add the oil and mix well. Begin to add the flour gradually along with the baking powder. Once the dough starts to form, add the raisins and pine nuts and knead. Once all the ingredients are well combined, start taking small pieces of dough and, with the palm of your hand, create balls and place them on a baking sheet lined with parchment paper.

  • To make them look nicer, I took a small stencil and decorated each ball. Then I sprinkled a bit of granulated sugar over each cookie before baking. Bake at 350°F in a preheated static oven for 15 minutes in the middle of the oven.
