Crostini with Sausage and Stracchino

The Crostini with sausage and stracchino are the perfect solution if you are looking for a quick yet impressive idea for your aperitifs. The creaminess of the stracchino pairs wonderfully with the saltiness of the sausage, all on a base of golden, crunchy bread. They disappear as soon as they reach the table.
Come with me and let’s start messing around in the kitchen.

Ingredients for Crostini with Sausage and Stracchino

  • 10.6 oz (≈2/3 lb) pork sausage
  • 3.5 oz stracchino
  • bread (I used a small loaf (filoncino))

Steps for Crostini with Sausage and Stracchino

  • Cut the bread into slices about 1.5 cm thick (approximately 5/8 inch). If you prefer a more rustic result, you can use a country-style loaf.

In a bowl, combine the sausage (removed from its casing and crumbled with a fork) and the stracchino. Work the mixture well until you obtain a smooth cream. If you like, add a pinch of black pepper.
Generously spread the sausage and stracchino mixture over each slice of bread, leveling the surface well.

Place the crostini on a baking tray and bake in a preheated conventional oven at 392°F for about 10-12 minutes, or until the bread is golden and the topping is well cooked and slightly browned.

  • Serve the crostini hot.

Storage for Crostini with Sausage and Stracchino

If you have leftovers, you can store the crostini in an airtight container in the refrigerator for up to 1 day. However, because the bread tends to soften when in contact with the stracchino, I recommend reheating them in the oven or in an air fryer for a few minutes before serving to restore the proper crunch to the base.

FAQ (Questions and Answers)

  • Can I freeze them?

It’s preferable not to freeze them once cooked to preserve the texture of the sausage and the cheese.

  • Can I use a different type of cheese?

You can customize your crostini by replacing the stracchino with other cheeses, provided they are creamy or melty enough to bind well with the sausage.

  • Can I use chicken sausage?

Chicken sausage is a great alternative if you prefer a lighter version compared to classic pork sausage.
