Delicious Cookies

These cookies have the right consistency to hold the filling in the center, they don’t break or crumble. Crunchy on the outside and perfectly flaky on the inside. Simple treats made with an oil-based shortcrust pastry and enriched in the center. I used apples, 100% hazelnut cream, and mandarin marmalade. You can use the filling you prefer. Ingredients

  • 1 egg
  • 1/4 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1 3/4 cups all-purpose flour
  • 1 lemon (grated zest)
  • 1 teaspoon baking powder
  • 2 apples
  • 2 tablespoons granulated sugar
  • 1 lemon (juice)
  • to taste cinnamon

Steps

  • In a bowl, work the sugar with the lemon zest (the more you work these two ingredients, the more intense the aroma will be) add the egg, oil, flour, and the teaspoon of baking powder.
    Mix all the ingredients well until you form a compact and soft dough.

    Take small pieces of dough and create balls, place them on a baking sheet lined with parchment paper and use the bottom of a small glass to press into the center of each ball to create an indentation.

  • If you decide to fill with apples: Cut the apples into very small chunks, pour into a pan with 2 tablespoons of sugar, lemon juice, and cinnamon. Stir and cook for 10 minutes. Once cooled, place them in the center of each cookie.

    You can opt for other fillings: jams, marmalades, hazelnut cream, etc.

    Bake at 350°F in a preheated static oven for 15-18 minutes.
