It’s a very simple and truly fragrant preparation, perfect for those who want to bring the taste of the sea to the table with a citrus touch. This time, instead of buying dogfish in slices, I chose the fillet: I had it opened by my trusted fishmonger leaving the skin on, so it remains even more tender and flavorful during cooking.

  • 14 oz Dogfish
  • 1 Orange (about ½ cup (120 ml))
  • Flour (For breading)
  • to taste extra virgin olive oil
  • to taste salt

Steps for the Dogfish with Orange

  • First, proceed to bread the dogfish fillets: I used rice flour, but you can use whatever you prefer.

    In a pan, pour a drizzle of extra virgin olive oil, let it heat for a minute, then place the fillets, browning them for a minute on both sides. After this time, pour the previously prepared and filtered orange juice. Cover with a lid and let cook for about 10 minutes on low heat. If it dries too much, add a shot glass of water and remember to salt and season to taste.

Storage

The dogfish with orange keeps perfectly in the refrigerator for 1-2 days, in an airtight container. When consuming it, I recommend gently reheating it in a pan adding a splash of water or orange juice to make the sauce soft and flavorful as freshly made. Freezing is not recommended to best preserve the delicate texture of the fish.
