Eggless Yogurt Cookies

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 cup yogurt (I use vanilla)
  • 1/3 cup vegetable oil
  • 1/3 cup granulated sugar
  • 1 tsp baking powder
  • 1 tbsp dark chocolate chips

Steps

  • In a bowl, mix the sugar with the yogurt and then add the oil.

    Start adding the flour gradually and finally the baking powder, mix until forming a dough.

    If you want to add chocolate chips, divide the dough in half and incorporate them, mixing well.

  • Shape the dough into balls and flatten them with the palm of your hand, and place on a baking sheet lined with parchment paper.

    Bake at 340°F in a preheated static oven in the center for 20 minutes.

Storage

The cookies can be kept for 4-5 days in an airtight container or in a cookie jar.

If you wish, you can flavor the cookies with orange or lemon zest, or with a packet of vanillin by adding it at the beginning of mixing the yogurt and sugar.

For best results, I recommend taking the yogurt out of the fridge about an hour before, so the cold doesn’t affect the rising.

You can also use gluten-free flour, just be careful with absorption, as gluten-free flour has different absorption properties, so I recommend adding it a little at a time until reaching the right dough consistency.
