Flower Tart with Fig Jam (Without a Mold!)
The Flower Tart with fig jam is a truly simple dessert and, I assure you, beautiful to present.
To make it, I used my oil-based shortcrust: it’s crumbly just right and perfect for this type of preparation. I wanted to make the filling more delicious with some fig jam, a combination I love!
The great thing is that I didn’t use any mold! I’ll show you right away how to do it, nothing complicated, don’t worry. You know I love practical and quick things.

Ingredients for the Flower Tart with Fig Jam
I used Type 1 flour. If you decide to change it, remember that each flour has a different absorption rate! So, the dough might need a bit more water or flour, depending on your choice.
- 2 1/2 cups Flour
- 2 eggs
- 1/3 cup Granulated sugar
- 1/3 cup Vegetable oil
- 1 teaspoon Baking powder
- 1 cup Fig jam
Steps for the Flower Tart with Fig Jam
In a bowl, mix the oil with the sugar using a fork, then add the two eggs and blend well.
Add the flour in several batches and, lastly, the baking powder.
Work all the ingredients well until you create a smooth dough (at this point remember my advice about the flour!).
Roll out the dough on a floured surface and, using a plate with a 11/12 inch diameter, cut out a perfect circle.
Place the obtained circle on a baking tray lined with parchment paper.
Re-knead the leftover scraps and cut out small circles (the future “leaves”) using the rim of a glass.
Spread the jam over the shortcrust disc. Then, start arranging the freshly made circles in a circular pattern, creating the flower design.
With the remaining dough, make small balls to decorate the center or edge of the tart as desired.Bake at 350 degrees Fahrenheit in a preheated static oven, placing the tray in the middle section, and bake for about 30 minutes.
The flower-shaped tart is ready to be enjoyed!

Storage and Tips.
The tart keeps very well at room temperature, simply covered with a food dome.
Tips for variations:
You can flavor the shortcrust dough with lemon zest, orange zest, or with vanillin.
For the filling, you can really use whatever you prefer! (Hazelnuts, apricot jam… let your imagination run wild!)
