Steps for fried bread with eggs
Cut the stale bread into slices about one or two centimeters thick. In a deep plate, pour water for soaking.
In a separate bowl, break the eggs, add salt, pepper, and if desired, grated cheese and beat well.
Quickly pass each slice of bread in the water to slightly soften it, being careful not to soak it too much.Immediately after, dip the slices in the beaten egg, ensuring they are well covered on each side.
Heat plenty of oil for frying in a pan. When the oil is hot, fry the bread, a few slices at a time.
Let it brown well for about two or three minutes in total, turning the slices halfway through cooking.
Drain the fried bread from the oil and place it on absorbent paper to remove excess oil.
Serve immediately, hot and fragrant.

Variations:
If you want a richer flavor, add some chopped parsley to the egg.
For a sweet version, use sugar and cinnamon instead of salt, pepper, and cheese.
If you use thin slices of cheese and ham, you can stuff the bread before dipping it in the egg.
