Fritters are delicious and very easy to prepare. They are good on their own and even better stuffed. I decided to fill half of my fritters with hazelnut cream and the other half with pistachio cream. The batter is prepared in 5 minutes and cooking takes around 3-4 minutes. Few ingredients for truly excellent results. At the end of the recipe, I leave you some frying tips. Ingredients
For a good result, all ingredients should be at room temperature. If you have eggs in the fridge, just place them in a bowl with warm water for a few minutes, and for the milk, just warm it up for a few minutes in the microwave or in a saucepan.
- 1 2/3 cups all-purpose flour
- 1 lemon (Grated zest)
- 1 teaspoon baking powder
- 2 eggs
- 3/8 cup vegetable oil
- 1/3 cup milk
- 1/4 cup granulated sugar
- 4 cups peanut oil
Steps
In a bowl, mix the eggs with the sugar and start adding the oil and milk in a stream.
Also add the grated lemon zest, the previously sifted flour, and finally the baking powder. Mix well until all ingredients are combined.
Meanwhile, start heating the vegetable oil in a high-sided skillet. To check if it’s ready, insert the tip of a toothpick. If bubbles form around it, the oil is hot enough.
With the help of two spoons, start dropping the batter into the hot oil.
It will take approximately 3/4 minutes to cook, depending on the size of the fritters. I recommend not making them too large and timing how long it takes for the first fritters to cook.
Drain the fritters on paper towels.
You can roll the warm fritters in granulated sugar or let them cool and dust with powdered sugar. Alternatively, fill them with creams as I did, using a piping bag.
The fritters are ready to be enjoyed.
Tips
➡️To check if the oil is ready, just take a wooden skewer and immerse it in the hot oil. If bubbles form around the wooden skewer, the oil is at the right temperature.
➡️The oil should not be too hot, otherwise you risk having fritters cooked on the outside and raw inside. If they darken too much, lower the heat or remove the pan from the stove to cool the oil down.
➡️If a sort of foam appears during frying, it means the oil temperature is too low or has dropped, for example, when trying to cook too many pieces at once. In this case, just remove the foam with a skimmer and wait for the oil to return to the right temperature before frying more pieces.
