Giant Shortcrust Pastry Cookie

What is better than a giant cookie made of shortcrust pastry filled with hazelnut cream or jam? Those who have been following me for a while know my passion for shortcrust pastry. I love the taste of a cookie that melts in your mouth. For Valentine’s Day, I made a heart-shaped one, but feel free to make the giant cookie in any shape you prefer.

Ingredients

If you want to make a smaller giant cookie, just halve the doses. With these doses, you can make one large heart, and with the leftover trimmings, you can make 20 small cookies.

  • 4 cups all-purpose flour
  • 2 eggs
  • 2 tsp baking powder
  • 14 tbsp butter
  • 1 cup powdered sugar
  • 1/4 cup water

Steps

  • Work the softened butter with the powdered sugar using a spoon. Once the cream is ready, add the eggs, flour, and baking powder, and start combining all the ingredients. At this point, if necessary, to help compact the dough, add 1/4 cup of water. Quickly compact without overworking the dough. Wrap the shortcrust pastry in cling film and refrigerate for an hour.

  • Take the dough and divide it into two parts, start rolling out the first piece on a lightly floured parchment paper. If you want to make a heart shape, slightly flour the surface of the rolled dough, fold it in half, and cut out a half-heart shape with a knife. This way, you’ll get a regular heart shape. Roll out the second piece of shortcrust pastry, slightly overlap with the first heart, lightly floured, and cut out. This step will help you have the same size.

  • Once the heart-shaped shortcrust pastry is ready, fill half of it with hazelnut cream and the other half with strawberry jam, place the other heart on top. Seal the edges well and bake at 356°F for about 25 minutes

  • The covered heart-shaped tart is ready. Let it cool completely and then decorate as desired. I decorated half of the heart with chocolate melted in a bain-marie. I melted the chocolate and then brushed it on with a brush/spatula/spoon. I decorated as desired.
