These days, the atmosphere becomes magical, and I couldn’t help but think of something special for the holidays! Today my cookies dress up for the occasion and become Christmas Cookies, a simple and delicious gluten-free recipe, perfect for a heartfelt gift or to sweeten December afternoons.
They are crumbly and light cookies that smell like a celebration. The beauty is that you can have fun creating the shapes you love most and then fill them with jam or colorful creams. They are so tasty and nice to look at that they will disappear in no time. Come with me, let’s start baking.

Ingredients for Gluten-Free Christmas Cookies

  • 1 1/4 cups rice flour
  • 1/4 cup milk
  • 3 1/2 tbsp butter (Soft)
  • 1/4 cup granulated sugar
  • 1 teaspoon baking powder
  • Half Lemon (Grated zest)

Steps for Gluten-Free Christmas Cookies

  • Pour the flour, baking powder, and sugar into a bowl.
    Incorporate the lemon zest, milk, and then add the butter in pieces, working until you obtain a homogeneous dough. (If it doesn’t come together immediately, insist, rice flour needs more time, if necessary add a few more drops of milk or water).
    Wrap in plastic wrap and put in the fridge for an hour.

    After this time, take the dough, work it quickly, and roll it out into a very thin sheet with the help of a rolling pin on a floured surface.
    Create the shapes and place them on a baking sheet lined with parchment paper.
    Bake in a static oven, preheated to 350°F for 10 minutes.

  • Once cool, place a teaspoon of jam or cream of your choice in the center and then cover with another cookie.

    You can sprinkle them with a bit of powdered sugar at the end to make them even more beautiful!
