The great thing is that they are super easy to make, and you won’t have to fuss with rolling out dough and cookie cutters. Just prepare the dough, and then spread it directly with your hands on a baking sheet, garnish, bake, and once baked, cut them with a knife to get your cookies!

Ingredients for the Gluten-Free Cookies with Hazelnuts and Chocolate

  • 2 cups rice flour
  • 1/3 cup potato starch
  • 6 tbsp vegetable oil
  • 1/4 cup granulated sugar
  • 2/3 cup Greek yogurt
  • 1 tsp baking powder

Steps for Gluten-Free Cookies with Hazelnuts and Chocolate

  • In a bowl, mix the oil with the sugar and then add the yogurt.
    Add in the flour, the baking powder, and the egg.
    Mix all the ingredients well. Place and spread the dough directly on a baking sheet lined with parchment paper, using your hands or a rolling pin.
    Decorate the surface with hazelnuts and chocolate chips or shavings.
    Bake in a preheated static oven at 350°F for 13-15 minutes.

  • Once baked and cooled, cut to form the cookies.
