Ingredients for the Gluten-Free Dry Focaccia
- 8.8 Gluten-Free Flour
- cup water
- to taste salt
- 1.4 tbsp Extra Virgin Olive Oil
Steps for the Gluten-Free Dry Focaccia
Pour the flour, salt, and oil into a bowl and start adding the water gradually.
Knead all ingredients well to form a dough ball. If necessary, you can add a little more water.
The dough should be soft.
Let the dough rest at room temperature for 20 minutes. After resting, it will roll out perfectly.
Roll the dough as thinly as possible. If easier, divide the dough into two.
Once the sheet is rolled out, divide it in two if you haven’t already, and place it on a baking sheet lined with parchment paper.
Brush the surface with oil and, if you like, season with oregano.
Bake in a preheated static oven at 392°F for 15-18 minutes.
After 7 minutes, switch the baking sheets for even cooking.
For the last two minutes, turn on the grill.

Storage
The Gluten-Free Dry Focaccia has the great advantage of staying crunchy and fragrant for many days, thanks to its “dry” nature. Once out of the oven, it’s crucial to let it cool completely on a rack to allow residual steam to evaporate. This step is vital to preserve its irresistible crunchiness and prevent it from softening.
Once completely cooled, the focaccia should be stored in an airtight container or a well-sealed paper food bag. It should be kept at room temperature, away from heat or humidity sources. Be sure not to cover it with plastic wrap while still warm, as trapped moisture would ruin the texture.
