Gluten-Free Rice Fritters are delightful and very simple treats to make, a real treat to enjoy after meals or as a snack. They are very simple, made with: rice, eggs, butter, sugar, citrus zest, and flour. Ingredients for Gluten-Free Rice Fritters
- 2 cups milk
- 1 egg
- 3/4 cup rice (I used vialone nano)
- 1 teaspoon vanilla extract
- 1 lemon (Grated zest)
- 1/4 cup rice flour (or all-purpose)
- 1 tbsp granulated sugar
- 2 tbsp butter
- 1 teaspoon baking powder
Steps for Gluten-Free Rice Fritters
In a pot, pour the milk, rice, sugar, butter, and vanilla extract. Stir to combine the ingredients and cook for about 20 minutes.
Remember to stir often during cooking to prevent a skin from forming on the surface and to avoid the rice from sticking to the bottom.
If the rice is not yet cooked and the milk has been fully absorbed, you can add a bit more hot milk to reach the right consistency.
Once the rice is ready and creamy, let it cool completely before proceeding with the addition of eggs and flour.Transfer the cooked rice into a bowl and let it cool completely. This step is crucial for the final consistency of the batter.
Add and thoroughly mix in the egg, flour, and baking powder, working the mixture until it is perfectly homogeneous.Heat some peanut oil in a pan and bring it to temperature. To check if the oil is ready and you don’t have a thermometer, you can dip a toothpick in: when the oil sizzles around it, it’s ready.
Slide small portions of rice into the hot oil using two spoons. A small trick: dip the spoon in the oil before scooping the batter, this step will help the batter slide off easier without sticking.
Fry the fritters for about 3-4 minutes, until they are perfectly golden.
Drain and place the fritters on paper towels, let them cool for 20 seconds and then roll them in granulated sugar so it adheres well.

Tips
The oil should be hot but not too hot, otherwise the fritters will be raw inside. If they darken immediately, lower the heat or move the pan off the heat.
If you notice foam during frying, it means the temperature is too low. Remove it with a skimmer and wait for the oil to reheat before continuing.
Fry few pieces at a time to get dry and golden fritters.
