Grandma Eda was my husband’s grandmother, a fantastic woman with great culinary skills, full of values and conviviality. I still remember when I first tasted this Russian salad: I fell in love with it instantly.
Over time, I learned what she loved to do: cook. Her Russian salad is very easy to make, and I hope this recipe from Grandma Eda reaches your hearts too.

Ingredients for Grandma Eda’s Russian Salad

  • 4 cups Potatoes
  • 1 1/4 cups peas
  • 1 cup carrots
  • 3/4 cup mayonnaise
  • 2 hard-boiled eggs (For decoration)

Steps for Grandma Eda’s Russian Salad

  • First, peel the potatoes and carrots and cut them into small chunks.
    Put the chunks into a pot with boiling salted water and cook until done (the vegetables are ready when a fork easily pierces them).
    Once cooked, remove them from the pot using a slotted spoon.

    In the same cooking water, cook the peas until ready.
    While the peas are cooking, mash the potatoes and carrots with a fork.
    When the peas are done, drain them and add to the mashed potatoes and carrots.
    Mix and allow to cool completely.

    Add the mayonnaise to the vegetable mixture and mix well.
    Place the Russian salad in a baking dish or a bowl and level the surface.
    Decorate as desired with hard-boiled eggs, pickles, mushrooms, bell peppers strips, or anything you like, adding some extra mayonnaise dollops.
