Grandma Eda’s Russian Salad. A special recipe, a recipe from the heart.
Grandma Eda was my husband’s grandmother, a fantastic woman with great culinary skills, full of values and conviviality. I still remember when I first tasted this Russian salad: I fell in love instantly.
Over time, I learned what she loved to do: cook. Her Russian salad is very easy to make, and I hope Grandma Eda’s recipe reaches your hearts too.

Ingredients for Grandma Eda’s Russian Salad
- 21 oz Potatoes
- 7 oz peas
- 5.5 oz carrots
- 7 oz mayonnaise
- 2 hard-boiled eggs (For decoration)
Steps for Grandma Eda’s Russian Salad
First, peel the potatoes and carrots and cut them into small cubes.
Place the cubes into a pot with boiling salted water and cook until ready (the vegetables are done when a fork easily pierces them).
Once cooked, remove them from the pot with a slotted spoon.In the same cooking water, cook the peas until done.
While the peas cook, mash the potatoes and carrots with a fork.
When the peas are cooked, drain them and add them to the mashed potatoes and carrots.
Mix and let cool completely.
Mix in the mayonnaise with the vegetable mixture and combine well.
Place the Russian salad in a baking dish or bowl and smooth the surface.
Decorate as desired with hard-boiled eggs, pickles, mushrooms, peppers in strips or whatever you prefer, adding some extra dollops of mayonnaise.
