Green Bean Omelette: the quick, nutritious, and tasty dinner saver.
It’s always the right time for a good omelette, and today I decided to enrich a classic one with some green beans I had left over. The result is an extremely tasty and nutritious dish, capable of satisfying everyone: even my husband, who doesn’t particularly like vegetables, has given this recipe his seal of approval!
The green bean omelette can be prepared in no time, making it the ideal ally for those hectic days when you need a great lunch or dinner saver. Ingredients for a green bean omelette

  • 9 oz green beans
  • 4 eggs
  • 1 tbsp pecorino romano (Not necessary)
  • to taste salt

Steps

  • For this recipe, you can use either fresh or frozen green beans. Start with cooking: boil the green beans in salted water until they are tender, then drain them well and let them cool. If they are too long, you can cut them into pieces.
    In a bowl, beat the eggs with a pinch of salt and, if you like, some grated cheese. Add the cooled green beans and mix carefully. Heat a drizzle of extra virgin olive oil in a non-stick skillet and pour in the mixture.

    Cover with a lid and cook for about 4-5 minutes over low heat.

  • Flip the omelette with the help of a plate and finish cooking on the other side for another 3 minutes, until it is nicely golden.

Storage
