Let me introduce you to the Happy Holidays Cake…my recipe for a Christmas (and more) dessert ready in just a few minutes and without baking.
When thinking about the holidays, something delicious, indulgent, and cheerful comes to mind.
But often, long and complicated preparations are also thought of.
What if this year, to wish everyone “Happy Holidays”, we made a dessert that is the exact opposite? An incredibly easy, super quick dessert that requires only 3 ingredients.
The crunchiness of the cookies meets the creaminess of the hazelnut spread and the butter. These three simple ingredients, combined, create a delicious treat reminiscent of a chocolate salami.
It’s the perfect dessert if you have little time and don’t want to turn on the oven.
Come with me, let’s start baking right away. Enjoy the recipe, Giusi.

Ingredients for the Happy Holidays Cake
- 7 oz Cookies
- 7 oz hazelnut spread
- 4.4 oz Butter
- 1.8 oz white chocolate (to melt)
- Toppings (Candied fruit or whatever you prefer)
Tools
- 1 Mold 9.5 inches
Steps for the Happy Holidays Cake
First, choose the cookies you prefer (digestive, plain, cocoa, etc.) and coarsely crumble them with your hands or with a mixer. Pour the crumbled cookies into a large bowl.
Add 2-3 generous tablespoons of hazelnut spread (or any flavor you prefer) to the cookie crumbs. Mix well with a spoon or spatula.
Add the butter that you have previously melted (and allowed to cool slightly) to the mixture.
Quickly mix all the ingredients; the mixture should be moist and easily compactable.
Pour the mixture into a mold lined with baking paper (if you are using a paper mold, no need to line). Press well on the bottom and sides with the back of a spoon.
Place the cake in the refrigerator for a minimum of two hours.
After the time has passed, remove the cake from the mold. Melt the white chocolate in a bain-marie or microwave. With the help of a piping bag or simply a spoon, start decorating the surface of the Happy Holidays Cake.
Tip: The chocolate will tend to solidify immediately because the base of the dessert is very cold. If you want to add decorations (sprinkles, toppings, Christmas sugars), I recommend doing it immediately while pouring the melted chocolate, to make it adhere well before it hardens.
There’s nothing more satisfying than serving a delicious dessert, knowing it required very little effort. This cake is not only quick, but it’s also extremely versatile; feel free to decorate it as you like.
