The hazelnut cookies are not only very good but also very easy to prepare. You will only need three ingredients and you’re done. One egg white, sugar, and of course good hazelnuts to chop, in less than 15 minutes you’ll have treats to enjoy that will amaze you.

Ingredients
- 1 3/4 cups chopped toasted hazelnuts (To chop)
- 1 egg white
- 1/4 cup granulated sugar
Steps
First, coarsely chop the hazelnuts in a food processor.
In a bowl, whip the egg white with a hand whisk for a few minutes and add the sugar. Work the mixture until combined.
Also add the chopped hazelnuts and mix well, the mixture will be very moist.
Start to create the balls, to prevent the dough from sticking, wet your hands occasionally. Place the balls on a baking sheet lined with parchment paper.
Bake at 350°F in a preheated static oven for 12 minutes, no more. Let the hazelnut cookies cool completely and enjoy with great satisfaction.
The cookies will be very soft once out of the oven, which is normal, they will firm up after a few minutes.

Storage
The cookies keep well covered for 4 days, but I assure you they won’t last that long 😅
