These treats are incredibly easy to make. Soft, fragrant, and very aromatic, you just need to mix all the ingredients in a bowl and blend them. Quick and easy. Lemon cookies are always a delight. Soft cookies with an enticing lemon aroma.

Ingredients
I used some whole wheat flour; if you wish, you can replace it with all-purpose flour
- 1 cup all-purpose flour
- 1 1/2 cups whole wheat flour
- 1/3 cup granulated sugar
- 3 1/2 tbsp butter
- 2 eggs
- 2 tsp baking powder
- 1 grated zest of one lemon
- 10 oz lemon marmalade
Steps
In a bowl, add all the ingredients except the marmalade, and start mixing
Once all the ingredients are blended, turn the dough onto a lightly floured work surface and knead for a few minutes.
Once the dough is formed, divide it in two, and roll out both pieces.
Place the rolled-out dough on parchment paper and spread the lemon marmalade on top, smoothing it out well.
Cover with the other rolled-out dough, cut into squares, strips, or as you prefer with the help of a knife
Space the squares apart from each other
Bake at 350°F for about 20 minutes
The lemon cookies are ready to be enjoyed, fragrant and delicious.

Storage
The lemon cookies can be stored under a glass dome or in an airtight container for 3-4 days in a cool place.
