Soft Mint Cookies: Freshness and Fragrance in a Flash.
Today, I present these delightful soft mint cookies. They are a fantastic alternative to usual sweets and, most importantly, are very quick to make!
The mint cookies are very unique treats thanks to the addition of chopped mint in the dough: the aroma is incredible! They are ideal at any time of the day for a touch of freshness.
To make them even more indulgent, you can add dark chocolate chips to the dough, a classic and winning combination.

Ingredients for Mint Cookies

  • 1 2/3 cups Flour (I use all-purpose flour)
  • 1/3 oz fresh mint (About 30 leaves)
  • 3 1/2 tbsp butter (Softened)
  • 1/4 cup Granulated sugar
  • 1 egg
  • 1 tsp baking powder

Steps for Mint Cookies

  • Wash the mint leaves thoroughly and dry them well. Blend the mint together with the granulated sugar using a mixer.
    Pour the resulting mixture into a bowl and add the egg, the previously softened butter, and mix well with a fork.
    Also add the previously sifted flour and baking powder.
    Work the dough until it forms a loaf (it will take around 2-3 minutes; it might seem not to compact, but keep insisting and you will see the loaf become homogeneous, smooth, and soft).

    Create the balls and slightly flatten them.
    Place on a baking tray lined with baking paper and bake at 350°F (preheated static oven) for 15 minutes.
