Muffins with Oat Flakes: Delicious, Vegan, and Pantry-Clearing!
Today, I’m sharing another recipe that solves a common problem: using up oat flakes! I don’t know about you, but I frequently buy them for breakfast and then they just stay in the pantry for too long. So, I took advantage of that and created these delicious Muffins with Oat Flakes (after trying cookies with oat flakes).
The ingredients, as you will see, combine perfectly to create a super tasty and comforting flavor.
And the best part? These muffins are egg-free and also vegan, which makes them perfect for everyone. They are the ideal breakfast or snack to start the day with energy and lightness.

Ingredients for muffins with oat flakes
- 1 3/4 cups flour (I used all-purpose flour)
- 1 1/2 cups whole oat flakes
- 3 tbsps brown sugar (or granulated)
- 2/3 cup lukewarm water
- 2 tsps baking powder
- 3 oz vegetable oil
- 2/3 oz chocolate chips
Tools
I used small muffin molds, but you can use medium or large ones.
Steps for muffins with oat flakes
In a bowl, mix the flour, sugar, oat flakes, and baking powder.
Add the orange juice and oil, mix well.
At this point, add the chocolate chips; the mixture will be very creamy.
With the help of two teaspoons, place the mixture into the muffin liners.
Bake at 350°F in a preheated static oven for 20 minutes.
Your Muffins with Oat Flakes are ready!
Take them out of the oven and let them cool on a rack. See? Very few steps for a super tasty result, egg-free and vegan! Perfect for your breakfast or snack.
