I’m sharing with you this very simple oil shortcrust pastry, ideal for cookies and tarts. Being made without butter, it’s also a perfect alternative for those who are lactose intolerant or looking for a lighter dessert.
It’s a pastry that is prepared very quickly and does not require chilling in the fridge. This oil pastry will make your sweets super tasty and crumbly just right. I’m sure it will become your favorite.

Ingredients for the Oil Shortcrust Pastry

With these quantities, you will get about 30 cookies or a tart with a diameter of 9.5 inches.

  • 2 1/2 cups all-purpose flour
  • 2/3 cup granulated sugar
  • 2 eggs
  • 1/3 cup vegetable oil
  • 1 teaspoon baking powder
  • 1 pinch salt

Steps for the Oil Shortcrust Pastry

  • Work the oil with the sugar using a fork.
    Add the two eggs and the pinch of salt, and mix well.
    Add the flour in batches and, finally, the baking powder.
    Mix well the ingredients until you create a homogeneous dough ball.

  • Now decide if you want to create a tart or make cookies.
    If making a tart, bake in a preheated static oven at 356°F for 35-40 minutes (depending on how much and what filling you decide to use).
    For the cookies, the baking time will be about 10 minutes at a preheated static oven at 356°F.
