One-Minute Soft Cake — an effortless sweetness.
You know those days when you desperately crave something tasty but have zero time (and little desire) to dirty a million bowls? This cake is the magical answer. It’s the simplest dessert in the world: it’s made in one minute flat, you don’t need a stand mixer or electric beaters, just a bowl and a whisk. The result? A cloud of incredible softness that smells like home. It’s the perfect last-minute breakfast cake or an impromptu snack that will make everyone happy. Come along and let’s start baking.

Ingredients for the one-minute soft cake
- 1 2/3 cups 00 flour (all-purpose flour)
- 1/3 cup granulated sugar (I used unrefined cane sugar)
- 6 tbsp vegetable oil
- 1/4 cup milk
- 1/2 cup water
- 4 tsp baking powder
- 1 sachet vanillin (vanilla powder)
Steps for the one-minute soft cake
In a bowl, start by whisking the eggs at room temperature with the sugar (if you notice a darker color, that’s because I chose to use unrefined cane sugar).
Then pour in the milk, the oil and the water, continuing to mix with a hand whisk. Finally, add the flour, the baking powder and the vanillin, making sure to sift them first to avoid lumps.Quickly blend everything with the whisk until you obtain a smooth batter and pour it into a previously buttered and floured 20–22 cm (8–8.7 in; about 8–9 in) pan.
Bake in a preheated conventional (static) oven at 356°F for about 35 minutes.
If you prefer, you can use a larger pan: in that case the cake will be slightly lower, so start checking for doneness after 25 minutes with the classic toothpick test, as baking times will vary slightly.

Storage
This cake stays delicious for 3–4 days if stored correctly. The trick to keep it from drying out is to store it under a glass cake dome or inside an airtight container, kept in a cool, dry place. If the weather is very hot, you can also wrap it in plastic wrap to preserve its moisture.
