Sea Bass or Branzino? In fact, there is no difference because we are talking about the same fish; the only difference is in the name. In the Adriatic area, especially from Tuscany downwards, it is called “spigola,” while in Liguria it is known as “branzino,” a name that would derive from the Venetian “branza” referring to the gills.
A healthy, light dish ready in a few minutes. Bringing such a refined fish main course to the table has never been so simple. Let’s start cooking right away!

Steps for Pan-Seared Lemon Sea Bass
I used some sea bass that were already gutted. I washed the sea bass well under running water and patted it dry with paper towels.
After washing the lemon, I sliced it and placed it inside the sea bass along with the garlic clove.
I placed the sea bass in a pan with a drizzle of olive oil. I started cooking over low heat and after about three minutes, I added the juice of one lemon; I covered with a lid and let it cook for 1520 minutes on low heat.
The sea bass is ready to be enjoyed!
There you go! Your pan-seared sea bass is ready to be served. The meat, tender and moist thanks to the slow cooking, perfectly matches the fresh aroma of lemon and garlic. Don’t forget to pour all the delicious sauce that has formed at the bottom of the pan over the fish.
A healthy, light, and quick second course, perfect if paired with a simple side dish.
I hope you enjoyed this recipe! See you on the next culinary adventure, to try out a new dish.
