Ingredients for the Paradise Cake
- 2/3 cup all-purpose flour
- 2/3 cup potato starch
- 2/3 cup granulated sugar
- 3 1/4 oz butter (To be melted)
- 3 eggs
- 1 1/2 tsp baking powder

Steps
Preheat the static oven to 350°F. Butter and flour a rectangular pan 12×8 inches.
In a bowl, whisk the eggs with the sugar until frothy.
Add the previously melted and cooled butter.
Then add the flour, potato starch, and baking powder previously sifted.
Mix all the ingredients with an electric mixer until you get a smooth and homogeneous batter. Add the lemon zest.
When the batter is ready, pour it into the buttered and floured pan.
Bake in a preheated static oven at 350°F for 25 minutes.
After this time, do the toothpick test: if the toothpick comes out clean, the cake is ready, otherwise extend for 5 more minutes.
Allow the cake to cool completely in the pan.
This base is perfect to enjoy as is, dusted with powdered sugar. But if your goal is Kinder Paradise, simply cut the cake horizontally into two layers and fill it with a simple milk cream (based on fresh cream and condensed milk).
