Paradise Cake

Ingredients for the Paradise Cake

  • 3/4 cups all-purpose flour
  • 3/4 cups potato starch
  • 3/8 cups granulated sugar
  • 6 tbsps Butter (Melted)
  • 3 eggs
  • 1 1/2 tsps baking powder

Steps

  • Preheat the static oven to 356°F. Butter and flour a rectangular mold 12×8 inches.
    In a bowl, beat the eggs with the sugar until they are foamy.
    Add the melted butter that has been allowed to cool.
    Then add the flour, the potato starch, and the sifted baking powder.
    Mix all the ingredients with an electric whisk until you get a smooth and homogeneous mixture. Add the lemon zest.
    When the mixture is ready, pour it into the buttered and floured mold.
    Bake in the preheated static oven at 356°F for 25 minutes.
    After this time, perform the toothpick test: if the toothpick comes out dry, the cake is ready; otherwise, extend by 5 minutes.

  • Let the cake cool completely in the pan.

    This base is perfect to enjoy as is, sprinkled with powdered sugar. But if your goal is the Kinder Paradiso, all you need to do is cut the cake horizontally into two layers and fill it with a simple milk cream (based on fresh cream and condensed milk).
