Ingredients for Pasta with Gorgonzola
- 7 oz Pasta
- 4 oz Mild Gorgonzola (I use this brand and I like it very much)
- 2 oz Bresaola
- 1/3 cup milk

- 1 Pan 9.5 inches
- 1 Pot
Steps
Put a pot with plenty of salted water on the fire and, when it boils, add the pasta.
While the pasta cooks, prepare the Gorgonzola cream. Take the Mild Gorgonzola and cut it into pieces.
Pour the milk into a non-stick pan and heat it over low heat.
Add the Gorgonzola pieces to the pan with the hot milk. Stir continuously with a spoon until the cheese is completely melted, creating a smooth and lump-free cream. Turn off the heat.Meanwhile, cut the Bresaola into thin strips or shreds. Set aside.
Drain the pasta very al dente, keeping about half a glass of cooking water (it will be useful for mixing).
Pour the drained pasta directly into the pan with the Gorgonzola cream.Stir to thoroughly combine the cream with the pasta. If the sauce seems too thick, add a spoonful of the reserved cooking water to make it creamier.
Transfer the pasta to plates and immediately sprinkle the raw Bresaola strips on top. The heat of the pasta will slightly soften the Bresaola and enhance its aroma.
Serve immediately.
