Peach Jam Crumble Cake

Ingredients

  • 2 1/2 cups Flour (I used type 1 flour)
  • 2/5 cup Granulated sugar
  • 2 eggs
  • 1 1/2 tsp baking powder
  • 3 tbsp vegetable oil
  • 1 1/4 cups peach jam

  • Tart Pan 8/9 inches
  • 1 Bowl

Steps

  • In a large bowl, combine the flour, sugar, and baking powder. Mix well with a whisk.
    Make a well in the center and add the eggs and oil. Start mixing with a fork, then work the dough with your hands. 
    You do not want a compact dough, but rather a crumbly and “crumb” texture. If the dough is too dry, add one or two tablespoons of water.

    Line a 8-9 inch tart pan with parchment paper. Pour about two-thirds of the crumbs into the bottom and gently press them with your fingers to create the cake base. Distribute the peach jam evenly.

    Cover everything with the remaining crumbs. 
    Place the cake in a preheated static oven at 350°F and bake for about 40 minutes until the surface is golden brown.
