Ingredients for Pear and Chocolate Muffins
- 1 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/4 cup extra virgin olive oil (Or vegetable oil)
- 1 tsp baking powder
- 1/2 cup milk
- 2 eggs
- 3 Williams pears
- 1/2 cup dark chocolate (Chips or chunks)
Steps for Pear and Chocolate Muffins
First, peel the pears and cut them into small, regular chunks. Set them aside for a moment.
In a large bowl, using a hand whisk, beat the eggs with a pinch of salt. Gradually add the vegetable oil and immediately after, the milk, stirring until you obtain a homogeneous mixture.
Gradually add to the bowl the flour, sugar, and baking powder. Mix the batter with the whisk as much as possible. When the batter becomes too thick, use a spatula (or a spoon) to finish mixing it all together.
Gently fold the pear chunks and the chocolate (chips or chunks) into the batter using the spatula until they are well distributed.
Prepare a muffin tray and insert the paper liners (make sure they are sturdy). Using a spoon, fill the liners with the batter, but only up to about two-thirds of their height.
Bake the muffins in a preheated static oven at 350°F for about 25 minutes. Always remember to do the toothpick test before removing them: if it comes out dry, the pear and chocolate muffins are ready.
