Pita is a type of round, leavened flatbread, in this case cooked in a pan, made with wheat flour. It is a traditional food in the cuisines of the Middle East and the Mediterranean, from North Africa to Afghanistan.
A delicious bread that can be eaten in various ways, brushed with oil or accompanied by sauces or even filled with tuna and onion or cold cuts.

Ingredients
- 4 cups all-purpose flour
- 1 1/3 cups lukewarm water
- 1 teaspoon active dry yeast
- 2 tablespoons olive oil
- 2 teaspoons fine salt
Steps
In a bowl, pour the flour and yeast, mix well, and then add the salt.
Start pouring the water gradually, once the water is incorporated, add the oil. Knead vigorously on a work surface.
Once a smooth and homogeneous dough is formed, place the dough in a bowl covered with plastic wrap and let it rise for 3/4 hours.
After 4 hours, form about 8 small balls.
Flatten them directly with your hands to form disks.
Once all the balls are flattened, cover them with plastic wrap and let them rise for 1 hour
After this time, brush both sides with oil.
Heat a non-stick pan and start cooking the Pita, 2 minutes per side over high heat.
The Pita is ready to be enjoyed. I accompanied the Pita with a basil sauce (I chopped 1.4 oz of basil with 7 oz of ricotta cheese in a mixer) fresh and tasty.
You can cut the pita in half and fill it as you prefer.
