Polka Dot Cookies

Today I am sharing with you these polka dot cookies. Fun and very delicious cookies. I made these polka dot cookies with a simple oil shortcrust, the dough won’t even need to rest in the fridge. They are quick to prepare and I assure you they will surprise you with their simplicity but especially with their deliciousness. We can fill these polka dot cookies in many different ways, unleashing our creativity, jams, preserves, spreads, etc.

Ingredients

  • 2 3/4 cups all-purpose flour (I always use spelt flour for my desserts)
  • 2 eggs
  • 1/2 cup granulated sugar
  • 1/3 cup vegetable oil
  • 1 teaspoon baking powder

Steps

  • in a bowl, beat the eggs with the sugar and add the vegetable oil. Begin to incorporate the pre-sifted flour and baking powder, adding them gradually. Mix the dough with a fork until possible, then knead with your hands to create a smooth but very soft dough.

  • to avoid adding more flour, I rolled the dough between two sheets of parchment paper; do not roll the dough too thin, or the holes will not be deep enough. Once the dough is rolled, create circles with a cookie cutter or a glass as I did, and place the cookies on a baking tray lined with parchment paper. At this point, create the holes with a finger or the end of a spoon.

    If you want to decorate the cookies with chocolate chips, you can add them immediately into the holes; for jam, preserves, and other creams, insert them after baking, or they will spill out. Bake at 356 degrees Fahrenheit for 10 minutes in a preheated static oven.

  • once baked, remove from the oven and let cool completely. With the help of a syringe or two teaspoons, start filling the holes. Here they are, the polka dot cookies are ready to be devoured. Until the next recipe …bye
