Polka Dot Tart

A tart different from the usual ones. Made with an oil pastry, it is much lighter than a butter pastry. A crunchy shell with a crumbly inside, I made small holes where I put the jams inside. A good tart with a very nice appearance. I used half oat flour which can be easily replaced with all-purpose flour.

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1 1/4 cups whole oat flour (or all-purpose flour)
  • 1/3 cup olive oil
  • 1 tsp baking powder
  • Grated lemon zest (Optional)
  • 1/2 cup granulated sugar
  • 1 whole egg
  • 1 egg yolk
  • salt (A pinch)

Steps

  • In a bowl, add the egg yolk, whole egg, and sugar and start mixing with a fork

    Add a pinch of salt, drizzle in the oil, the lemon zest, and mix

    Start adding the flours a little at a time

    When it becomes too hard to mix with a fork, start kneading with your hands

  • Work the dough on a lightly floured surface

    In a few minutes, the dough will become homogeneous.

    Once ready, place the dough directly on parchment paper and, using your hands and a rolling pin, create a circle about 1/5 inch thick.

    Create holes; I used one of those caps used to close wine bottles.

  • Once the holes are done, fill them with jam or chocolate chips using a teaspoon

  • Once finished, bake at 350°F for about 30 minutes

  • The Polka Dot Tart is ready.

Storage

The tart keeps well under a glass dome for 2/3 days. But it won’t last that long, I assure you 😁
