Potato Croquettes

The potato croquettes are perfect for any occasion. You can prepare them in advance and cook them just in time to enjoy them hot. Today I present you with potato croquettes to bake in the oven or air fryer, soft and tasty. I added grated lemon zest to the dough, giving the croquettes an extra kick.

Ingredients for Potato Croquettes

If you have never tried it, I recommend trying gluten-free breadcrumbs or breadcrumbs with turmeric (You can find them in supermarkets) as they offer greater crispiness to the breading.

  • 14 oz potatoes, peeled, cooked, boiled
  • 1.5 oz Grated cheese
  • 1 Egg
  • 3.5 oz breadcrumbs (+ extra for outer breading)
  • to taste Parsley
  • to taste Salt
  • 1 lemon (Grated zest)

Steps for Potato Croquettes

  • After boiling and peeling the potatoes, place them in a bowl and mash them thoroughly with a potato masher or a fork until you get a smooth purée.
    Add the grated cheese, chopped fresh parsley, a pinch of salt, the egg, the breadcrumbs, and the grated lemon zest to the purée. Mix all the ingredients well until you obtain a compact and well-combined mixture.

    Take a small piece from the mixture and start creating the croquettes: shape them with your hands to form a cylinder of your preferred size. Once all the croquettes are made, roll them in breadcrumbs for an even coating and place them on a baking tray lined with parchment paper.

    For cooking, you can bake them at 356°F in a convection oven for 20 minutes or at 374°F in a static oven for the same time.

    If you prefer to use the air fryer, place the croquettes in the basket (without overlapping them too much) and cook at 392°F for about 12-15 minutes, spraying a little extra virgin olive oil on top to make them even more golden.
