Ingredients for pumpkin and eggs
- 4 eggs
- 4 cups (about 1.1 lb / 500 g) pumpkin (I used Delica pumpkin)
- 1 clove garlic
- to taste extra virgin olive oil

Steps to prepare pumpkin with eggs
To begin, thoroughly clean the pumpkin, removing the skin and seeds, and cut the flesh into small pieces.
Meanwhile, heat a skillet with a drizzle of extra virgin olive oil and sauté one garlic clove for a few seconds (you can remove it afterwards). At this point, add the pumpkin and stir well. Before covering, add about 1/2 cup of water (or broth) and a pinch of salt and pepper.
Cook covered until the pumpkin is tender, usually for about 20 minutes. Once the pumpkin is cooked, gently place the eggs on top of the creamy pumpkin bed.
Cover immediately and cook over low heat. Cook just long enough for the egg white to turn opaque: if you prefer a creamy yolk, don’t prolong the cooking.
Serve immediately, perhaps with a sprinkle of fresh parsley.

Tips
