Ricotta and Apple Cake

I don’t know about you, but I absolutely love cakes with ricotta in the batter, it makes the desserts super soft, just like those made with yogurt. Soft and very tasty also thanks to the addition of apples. The batter is prepared very quickly; there is no need to use electric beaters. A very easy cake to make. I used cow’s milk ricotta, which has a milder flavor than sheep’s milk ricotta. For best results, use ingredients at room temperature.

Ingredients

  • 3 Eggs
  • 1/2 cup Granulated sugar
  • 1/2 cup Cow's milk ricotta
  • 1/3 cup Water
  • 2 1/4 cups All-purpose flour (I use spelt)
  • 1 tbsp Baking powder
  • 1/4 cup Vegetable oil
  • 2 Apples

Tools

I used a rectangular mold 12 inches long and 8 inches wide.

You can use a mold with a 9.5/10-inch diameter.

Steps

  • beat the eggs with the sugar, add the ricotta, water, and oil, and mix all the ingredients well.

    start adding the sifted flour little by little and finally the baking powder. The batter will be very creamy.

  • Butter and flour a mold or use a sheet of wet and well-squeezed parchment paper to make it adhere well, then place it inside the mold.

    peel the apples and cut them into thin slices, lay them on top of the batter. Bake at 350 degrees Fahrenheit in a preheated static oven for 25-30 minutes, after 25 minutes do the toothpick test; if it comes out dry, remove the ricotta and apple cake from the oven.

  • let it cool completely inside the mold.
