Ricotta and Spinach Balls without Eggs

Small and tasty ricotta and spinach balls made with ricotta and spinach, they are egg-free. They are very easy and disappear in an instant… ideal even for those who don’t really like vegetables. This combo is always a hit with everyone. They are made in no time and with just three ingredients: ricotta, spinach, and breadcrumbs. You can bake them as I did, or use an air fryer, and for a slightly more indulgent version, you can also fry them.

Ingredients for Ricotta and Spinach Balls without Eggs

For this recipe, I used frozen spinach leaves; just follow the package instructions, cook and, it is very important, squeeze them well to remove all the water.

  • 9.5 spinach, cooked, boiled (Weight when cooked)
  • 1/2 cup ricotta
  • 1/3 cup Breadcrumbs (Plus extra for coating)
  • 2 tbsps Pecorino (Optional)
  • to taste salt

Steps for Ricotta and Spinach Balls without Eggs

  • Once the spinach is cooked, squeeze well and place in a bowl and, with scissors, chop.
    Add the ricotta, add the salt, and mix well with a fork. Add the breadcrumbs, Pecorino, and mix well.

    With slightly dampened hands, start forming the balls and then roll them in breadcrumbs. Place on a baking sheet lined with parchment paper.
    Lightly oil the balls on the surface and bake at 356°F for 15-20 minutes; turn on the grill for the last few minutes.

Storage

If there are any leftovers, we can store the ricotta and spinach balls in the refrigerator, in an airtight container, for up to 2-3 days. When we want to enjoy them again, just reheat them for a few minutes in the oven or in the air fryer to make them crispy again.

If we used fresh and not defrosted ingredients, we can also choose to freeze them raw: first place them on a tray well spaced apart, and once hardened, transfer them to the suitable food bags.
