Ingredients for the Roll with Hazelnut Cream
This recipe always works: I have successfully tested it using rice flour (perfect for those looking for a gluten-free option), as well as the classic 00, 0, and 1 flours. The result is always a guaranteed success!
- 1/2 cup 00 flour
- 1/4 cup granulated sugar
- 3 eggs (Large)
- salt (A pinch)
- 2 tbsps Hazelnut cream (For the filling)
- as needed hazelnut crumbs (For decoration)
- dark chocolate (For decoration)
Steps for the Roll with Hazelnut Cream
Line a baking tray with parchment paper.
Separate the yolks from the whites.
Beat the whites until stiff with a pinch of salt and set aside.In another bowl, beat the yolks with the sugar until they are frothy.
Add the flour to the yolks a little at a time.Incorporate the beaten whites into the yolk mixture, stirring with a spatula gently from bottom to top.
Pour the batter onto the parchment paper and level it into a rectangle about 28×23 cm (11×9 in). Bake at 356°F in a preheated static oven for 15 minutes.
Remove from the oven and flip the biscuit dough onto a clean towel or new parchment paper.
Roll it gently and let it cool in this shape.
Unroll when cool.
Fill with two heaping tablespoons of hazelnut cream and level.
Roll up tightly again.Meanwhile, melt some dark chocolate in a double boiler or microwave.
Decorate the surface of the roll with the melted chocolate, using a spoon or pastry bag.
Sprinkle with hazelnut crumbs or your choice.
