Rolled Cookie Cake

I made this delicious Rolled Cookie Cake with my soft oil-based shortcrust pastry, which is fluffy thanks to the powdered sugar in the dough. I filled the Rolled Cookie Cake with hazelnut cream, but if you prefer, you can also use jam. This dessert is very easy to make, it only takes a few steps for an excellent result.

Ingredients

  • 4 cups all-purpose flour
  • 1 cup powdered sugar
  • 1 tbsp baking powder
  • 2 eggs
  • 0.5 cup vegetable oil
  • 0.5 cup milk

Steps

  • In a bowl, mix the flour and powdered sugar.

    Gradually add the oil and milk, at this point add the eggs and baking powder.

    Start kneading with your hands, place the dough on a floured surface and work it until you create a smooth dough.

    If necessary, add more flour.

  • Divide the dough into two and roll it out with a rolling pin.

    Create a rectangle of 8 x 14 inches, level the cream, roll it up, and seal the edges well. To seal the edges properly, slightly wet them with water and press firmly.

    Repeat the same process with the other dough and create the filled roll.

    Place inside a baking pan lined with parchment paper the rolls and create a swirl.

  • Bake at 350°F in a preheated static oven for 30 minutes.

Storage and Tips.

Let the cake cool completely before cutting it.

The Rolled Cookie Cake can be stored for several days under a cake dome.

You can flavor the dough with orange zest, lemon zest, or vanilla.
