Romantic Valentine’s Day Tart…Easy Recipe with Oil Shortcrust Pastry (also Gluten-Free).
Today I felt romantic and decided to take advantage of it! With the upcoming Valentine’s Day, I thought of offering you this very simple and absolutely delicious tart. To make my romantic tart, I chose my tested oil shortcrust pastry: a light, crumbly, and quick base to prepare.
For the filling, I opted for a fragrant Black Cherry Jam. It is a really easy recipe, perfect for those who want to impress sweetly without spending hours in the kitchen. In addition to the classic version, you will also find directions for the gluten-free version, so that everyone can enjoy a moment of pure goodness.

Ingredients for the Romantic Tart
For the gluten-free version: 220 g rice flour and 130 g corn starch or potato starch.
- 10 1/2 oz all-purpose flour
- 2 3/4 oz granulated sugar
- 2 eggs
- 5 tbsp extra virgin olive oil (or vegetable oil)
- 1 baking powder (1 heaping teaspoon)
- 1 teaspoon vanilla extract
- 10 1/2 oz black cherry jam
Steps for the Romantic Tart
In a bowl, work the eggs with the sugar, also add the teaspoon of vanilla extract and then the oil. Finally, add the flour (the regular one or the mix of rice flour and corn starch or potato starch) and the teaspoon of baking powder, mixing all the ingredients well. If needed, add more flour until the dough is workable and soft.
Roll out the dough with a rolling pin on a sheet of parchment paper and, if necessary, lightly flour. Do not roll too thin; form a rectangle 8×4 inches by cutting with the help of a knife (or the shape you prefer), remove the trimmed edges, place on top the jam and spread well, away from the edges. Roll out the leftovers of the shortcrust pastry, create circles with a glass or a cutter and, inside, create hearts. Place the decorations on top of the jam.
Once the hearts are placed, take the edges and fold them inward, pressing well. Bake at 350°F in a preheated static oven for 25/30 minutes, until golden brown.
Let the tart cool completely before cutting and serving. This step is crucial to allow the jam, which tends to become liquid during baking, to firm up again and achieve a perfect cut.

Storage
The romantic tart keeps perfectly under a glass dome or in an airtight container for 3-4 days at room temperature. If the temperature in the house is too high, you can store it in the refrigerator, but make sure to take it out at least half an hour before consuming to allow the oil shortcrust pastry to regain its natural crumbliness.
