Rustic Cocoa Cookies

Rustic cookies are just what you need to start the day on the right foot. These rustic cookies are really quick to prepare and are delicious thanks to the cocoa in the dough. They are made with an oil-based shortcrust pastry, crunchy on the outside and soft on the inside. You won’t need to roll out the dough because just make simple balls, flatten them slightly and create the shape you like best in the center using a cookie cutter or simply with your finger. They are ideal in the morning or as a treat during the day.

Ingredients

  • 2.5 cups spelt flour (or all-purpose)
  • 2 eggs
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1/3 cup vegetable oil
  • 2 tsp baking powder

Steps

  • Work the eggs with the sugar using a fork, add the oil and mix. Add the cocoa and baking powder, start adding the flour gradually.

    The dough should be soft, non-sticky, and compact. If necessary, add more flour.

  • Make balls and place them on a baking tray lined with parchment paper, flatten slightly with your hands and create a hole in the middle.

    Bake at 350°F in a preheated static oven in the middle part of the oven for 15 minutes. I warn you, your kitchen will be filled with a wonderful cocoa aroma.
