Rustic Egg-Free Cookies

Rustic Cookies without eggs are proof that with very few ingredients you can achieve an amazing result! For this preparation, I chose to use type 2 flour, which gives a more authentic flavor, but you can easily substitute it with type 1 flour or whole wheat flour.
These cookies contain neither eggs nor butter, they are crispy on the outside and pleasantly soft inside. A very simple recipe to make with guaranteed results, perfect for a healthy breakfast or snack.

Ingredients for Rustic Egg-Free Cookies

  • 1 3/4 cups type 2 flour (or whole wheat)
  • 1/4 cup raw cane sugar (or cane or granulated)
  • 1/4 cup milk
  • 3 tbsp vegetable oil
  • 1 tsp vanilla extract
  • 1 tsp baking powder (for desserts)

Steps for Rustic Egg-Free Cookies

  • In a large bowl, combine and work together the flour (choose from type 2, type 1, or whole wheat), the baking powder, and the sugar. Mix the dry ingredients well.
    Add the vegetable oil, milk, and a pinch of salt. Combine all the ingredients with your hands or a spatula until a smooth dough forms.
    At this point, if you like, add chocolate chips or shavings. Incorporate the chocolate well into the dough, working it briefly.
    On a lightly floured surface, place the dough and gently flatten it with your hands or a rolling pin to create a rectangle about a quarter of an inch thick.
    Using a knife (or pasta wheel), make sticks or any shape you prefer for your cookies.

  • Place the sticks on a baking sheet lined with parchment paper or a silicone mat. Bake in a static oven preheated to 350°F for about 20 minutes. The cookies will be ready when they are golden on the edges.
