Ingredients for Sausage and Beans in Tomato Sauce
- 4 sausages
- 1 2/3 cups tomato purée (I used the rustic kind)
- 9 oz oz white beans (cannellini) (Pre-cooked)
Step-by-step Guide for Sausage and Beans in Tomato Sauce
Pour extra virgin olive oil into a large pan along with a clove of garlic. Sauté until golden, then remove the garlic.
Brown the sausage (skin removed) evenly on all sides over medium-high heat for a few minutes until well browned.
Drain and rinse the cooked beans and add them with the tomato purée to the pan. Cover the pan and reduce the heat.
Let the sauce simmer slowly for about twenty minutes, stirring occasionally and adding a bit of hot water or broth if necessary to keep it moist.
Gently stir and season with salt and pepper.
Continue cooking for another five to ten minutes over low heat, until the beans are well-flavored and the sauce is thick and rich.
Serve the dish immediately while hot, accompanied by rustic bread or polenta.
