Savory Cantucci

Today I propose cantucci in a savory version. Very tasty and easy to prepare snacks, perfect for family lunches or with friends, or when you want to prepare something delicious during the week. The savory cantucci are crunchy on the outside and a bit soft inside. I filled them with salted toasted almonds, pistachios, and ginger. You can replace or add ingredients you prefer, like olives or bacon. Come with me, let’s start messing around right away.

Ingredients

I also added a tablespoon of ginger syrup and ginger pieces to the dough; if you don’t like it, you can omit it.

  • 1 1/2 cups all-purpose flour
  • 1/3 cup Grated cheese (I used Grana)
  • 1 egg
  • 1/4 cup milk
  • 1/4 cup Vegetable oil
  • 1 teaspoon instant yeast for savory preparations
  • 1/3 cup almonds (salted toasted)
  • 1/3 cup pistachios (I used chopped ones)
  • to taste ginger (I used candied ginger)

Steps

  • In a bowl, work the flour with the milk and oil.

    Add the egg and incorporate.

    Add the almonds, pistachios, I added a tablespoon of candied ginger, and finally the yeast.

    Mix well until all ingredients are combined.

    Divide the dough in two, create logs, and flatten the surface; if necessary, moisten your hands for easier handling.

  • Bake in a preheated static oven at 356°F for 10 minutes. After this time, remove the tray from the oven and, using a spatula or knife, cut slightly diagonally to make cantuccini about 3/4 inch thick.

    Place the cookies sideways and bake for 6 minutes. After this time, remove the tray from the oven, turn the cookies to the other side, and bake for another 6 minutes.
