The Savory Muffins are soft and fragrant single-serving cakes, perfect for any occasion. These tidbits are delicious and very easy to make!
Ideal as a tasty appetizer, for a buffet, or perhaps as a light and quick second course for lunch break. They are so soft and tasty that one leads to another. The beauty is that you will prepare them in no time, dirtying only one bowl.
The secret to a perfect Savory Muffin is to combine the dry ingredients with the liquid ones with very few stirs. You will get a rustic consistency and a batter that, once cooked, will be tall and incredibly soft.
You can enrich the basic recipe by adding
vegetables like grated zucchini, spinach, or sun-dried tomatoes or with cubes of cooked ham, strips of speck, or pieces of feta and scamorza cheese.
Just combine the ingredients you love most to create a different flavor each time. They are also perfect for recycling small leftovers in the fridge!

Ingredients for Savory Muffins

  • 2 cups all-purpose flour (or cake flour)
  • 1 cup milk
  • 2 eggs
  • 1/4 cup vegetable oil
  • 1 packet instant yeast for savory preparations (Type pizzaiolo)
  • 1/2 cup grated cheese (I used pecorino)
  • 2 zucchini (Or whatever you prefer)
  • 10 cherry tomatoes
  • 2.5 oz diced pancetta

Steps for Savory Muffins

  • In a large bowl, pour and mix the dry ingredients: the flour, the grated Pecorino Romano, and the packet of instant yeast for savory cakes. Set aside.

    In a second bowl, insert and mix with a whisk the milk, the eggs, and the vegetable oil until you get a smooth mixture.
    Begin to insert the liquids little by little into the bowl of dry ingredients. Quickly mix with a spatula only until the ingredients are just combined. The batter should be rustic and not overly mixed.
    Once combined, insert the small pieces of cherry tomatoes and zucchini, which you have previously cut into small pieces. Mix one last time to distribute the ingredients evenly in the batter.

  • Preheat the oven in static mode to 350°F.
    Insert the batter into the muffin molds (or cups) filling them about two-thirds full.
    Place a few strips of pancetta on the surface of each muffin for decoration and to make them even more tasty.
    Bake the savory muffins in the preheated oven at 350°F for about 30-35 minutes. The cooking time may vary slightly… they will be ready when they appear puffy and golden. Always do the toothpick test before removing them from the oven!

  • Remove the muffins and let them cool on a rack. This way they will remain soft and will be perfect to enjoy.

Storage and Variations

The savory muffins can be stored for 2-3 days in the fridge. It’s advisable to wrap them individually in plastic wrap to keep them soft.
Before enjoying them again, just slightly reheat them in the oven or microwave to make them crisp again.

As for the filling, feel free to let your imagination run wild and follow your tastes! Any ingredient you have in the fridge (cheeses, cold cuts, vegetables) is perfect to customize your muffins and never get bored!
