Ingredients for the Savory Pumpkin Focaccia

  • 4 3/4 cups all-purpose flour
  • 3/4 cup water
  • 1 tsp dry yeast
  • 1 egg
  • 11.6 oz pumpkin (Weight when cleaned and cooked)
  • 1 1/2 tsp fine salt
  • 2 tsps granulated sugar
  • 3 tbsp extra virgin olive oil

Steps for Preparing the Pumpkin Focaccia

  • Start by cleaning and cooking the pumpkin (either steamed or in a pan), then mash it coarsely with a fork.
    In a bowl, mix the flour, yeast, and sugar. In another bowl, combine the pumpkin pulp, egg, salt, water, and oil, and mix well.
    Gradually add the dry ingredients to the pumpkin mix. Mix first with a fork and then work the dough with oil-coated hands. The dough will be soft and sticky.
    Cover the bowl with plastic wrap and let it rise for three hours in a warm place.

  • After the first rise, oil your hands and the tray (18×14) well. Spread the dough in the tray, cover it and let it rise for another hour.
    Preheat the oven to 392 degrees Fahrenheit. Bake for 15 minutes in the lower part of the oven, then move the tray to the middle part and bake for another 15 minutes, until the focaccia is golden.
    Remove from the oven, let cool slightly, and serve.
