Semi-whole Cake with Jam

I just want to say that the softness of this cake will leave you speechless. As you know, I bake many sweets, but rarely do I achieve such a result on the first try. This cake immediately won me over as soon as I took it out of the oven. I enjoyed it with immense satisfaction. Perfect for breakfast, a snack, or after a meal; in short, it disappeared in my house in one day. Delicious and genuine. Come with me as we start baking right away.

Good recipe, Giusi.

Ingredients

The eggs and yogurt must be at room temperature. If you forgot to take them out of the fridge, just immerse the eggs in a bowl of warm water for a few minutes, and for the yogurt, just warm it up in the microwave or in a saucepan for a few minutes.

  • 1 3/4 cups Type 2 flour
  • 1/3 cup whole cane sugar
  • 2/3 cup Greek yogurt
  • 1/3 cup vegetable oil
  • 2 Eggs (Large)
  • 1 tbsp baking powder
  • 1 1/4 cups berry jam

Steps

  • In the bowl, mix the eggs with the sugar. Also add the oil and the yogurt.

Also pour in the previously sifted flour and baking powder.

The mixture will be very firm.

Pour the batter into a mold. I wanted a low cake, so I chose a 10-inch diameter mold. Level the dough well and place the chosen jam on top. Use a spoon to mix it with the batter over the entire surface.

Bake in a preheated static oven at 350 degrees Fahrenheit for 40 minutes.

  • Once cooked, let the cake cool completely in the mold.
