The shortbread cookies are one of the most simple and easy recipes to make, which is why I prepare them often, suitable for any occasion: breakfasts, snacks, or even as an after-dinner dessert.
They are delightful cookies that are very easy to make and melt in your mouth. Their texture is perfect: crunchy on the outside and crumbly on the inside.
To make them even more delicious, I topped them with a light layer of jam and chopped hazelnuts or peanuts. Be careful because one cookie leads to another! I made many, but they will disappear quickly.

Ingredients for the Shortbread Cookies
- 2 cups all-purpose flour
- 3/4 cup powdered sugar
- 7 tbsps butter
- 1 egg
- 1 packet vanilla flavor
Steps for the Shortbread Cookies
Work the butter with the sugar until it forms a creamy mixture. Add the egg, the flour, and the vanilla flavor. Knead; if necessary, add 2/3 tablespoons of water to help you combine. The dough should be smooth and compact. Refrigerate for at least 30 minutes.
After this time, take the dough and roll it out with a rolling pin on a lightly floured surface (I rolled it very thin as you can see in the photo). Create the shapes and place them on a baking tray lined with parchment paper. Brush with apricot jam and lightly press the chopped nuts or peanuts on top.
Bake at 350°F (static oven) for about 10/13 minutes.
If you wish to embellish further, melt some white chocolate and milk chocolate in a double boiler (or in the microwave). Lightly dip the surface of the cookie in the melted chocolate and then let it harden.
