Today I’m suggesting some simple cinnamon cookies that are a real treat. Their main feature? They are so crumbly that they literally melt in your mouth!
These are the perfect cookies for both adults and children, ideal for breakfast, a snack, or to accompany a good tea. The addition of cinnamon gives a wonderful aroma and a unique flavor, making them instantly special.
They are very simple and very quick to make, with few ingredients that you probably already have in your pantry. They are also a cute gift idea for the holidays!

Ingredients for Simple Cinnamon Cookies
- 2 cups all-purpose flour
- 1/2 cup butter (softened)
- 1 egg
- 1/2 cup dark brown sugar (or granulated)
- 2 tbsps ground cinnamon
Steps for Simple Cinnamon Cookies
In a bowl, work the softened butter with the sugar until creating a cream.
Once the cream is made, add the egg, then the flour and cinnamon. Mix all the ingredients.
Insist on forming the dough: it may seem crumbly, but if you persist, it will become smooth and homogeneous. If necessary, add a little more flour.
Once the dough is formed, wrap it in plastic wrap and leave it in the fridge for at least one hour. If you have more time, even better!
After the resting time, work the dough to make it soft (it will take a few minutes). Roll it out on a floured surface with the help of a rolling pin. Decide the thickness yourself; I chose to roll it very thinly to have cookies slightly more crisp on the outside.
Once all the shapes are made, place them on a baking sheet lined with parchment paper.Bake at 350 degrees (oven static) for 10 minutes or until golden.
Tip for large quantities: If you prepare two trays full of cookies, I suggest putting one tray below and one above, then after 5 minutes, switch the trays (bringing the top one below and vice versa).
Once baked, let the cookies cool completely. If you like, sprinkle with some powdered sugar.

These cookies keep very well for 5/6 days at room temperature. To keep them crumbly and preserve their aroma, store them in a tin box or in a well-sealed airtight container.
