Ingredients for Skillet-cooked Sausage and Pumpkin
- 1.3 lbs butternut squash
- 0.66 lbs Sausage
- 3.5 oz smoked provola cheese
Steps for Skillet-cooked Sausage and Pumpkin
To start, remove the sausage from its casing and crumble it carefully with your hands.
In a large skillet, heat a drizzle of oil and sauté the chopped shallot (if using) before browning the sausage for a few minutes.
At this point, add the pumpkin that you have cut into small cubes and season with salt (I recommend not overdoing it, as the sausage is already quite salty). Pour in half a glass of water, then cover and let it stew for about 10-15 minutes until the pumpkin becomes tender.
To finish, add the provola or mozzarella to make it stringy.
Serve immediately.
