If you’re looking for a main course that is comforting, super tasty, yet simple and quick to prepare, you’ve found the right recipe. The sausage and squash cooked in a skillet are the perfect marriage of flavors… the enveloping sweetness of stewed squash meets the savory taste of sautéed sausage, creating an autumnal mix that will drive everyone crazy.
This dish is ideal for everyday dinner because it requires few steps and about 20 minutes in the skillet.

The final touch of melted provolone or mozzarella makes everything wonderfully creamy and stringy, turning a simple preparation into a rich and surprising dish. Come with me, let’s start cooking.

Happy cooking, Giusi.

Ingredients for Skillet Cooked Sausage and Squash

  • 21 oz butternut squash
  • 10.5 oz Sausage
  • 3.5 oz smoked provolone

Steps for Skillet Cooked Sausage and Squash

  • To start, remove the sausage from the casing and crumble it thoroughly with your hands.

In a large skillet, heat a drizzle of oil and sauté the chopped shallot (if using) before browning the sausage for a few minutes.

At this point, add the squash which you have cut into small cubes and adjust the salt (I recommend not overdoing it as the sausage is already quite salty). Pour in half a glass of water, then cover and let stew for about 10-15 minutes, until the squash becomes tender.

To finish, add the provolone or mozzarella to make it stringy.

    Serve immediately.
