The soft cantucci are delicious little cookies with a tasty filling. They are perfect at any time of the day. I used the orange marmalade from Ribera, my hometown, to fill these soft cantucci, but feel free to use any filling you prefer. I assure you, though, that if you try this orange marmalade paired with this very soft pastry, you won’t regret it.

Ingredients
- 2 cups all-purpose flour (+ the flour needed for the work surface)
- 2 oz powdered sugar
- 3.5 tbsp milk
- 3.5 tbsp vegetable oil
- 1 egg
- 1.5 tsp baking powder
- as needed orange marmalade
Steps
Pour the flour, baking powder, and sugar into a bowl and mix. Start adding the warm milk and then the oil, also add the egg.
Knead as much as possible in the bowl, then continue working the dough on a floured surface until forming a dough ball. Additional flour may be needed to compact the dough.
Divide the dough into three parts. Start to roll out the dough on a floured surface or between two sheets of parchment paper aiming to create a rectangle 10 inches long and 6 inches high. Place the marmalade in the center and create the loaf by folding the longer side inward.
Roll until closed, two folds should suffice. Create all loaves and bake in a preheated static oven at 350°F for 20 minutes.
Once the loaves are baked, let them cool for 10 minutes and slice them into cookies with a knife.
